Vietnamese Pho Prawns Soup

Suitable for Gluten Free

Portion for 1 person

1/2 gamba of Celery
3 Garlic cloves
30g Ginger
1 Small carrot
1 Courgette
1 Chilly pepper
1 Shallot
1 Stick of lemongras
5 Laves of mint
1/2 lime
Handful coriander
150g Prawns
50g of Rice Noodles
1/3 tea spoon Wasabi
20g olive oil
Garlic Powder
Paprika Powder
Salt

Boil 700 ml of water for 20 minutes with

1/2 Celery cut in small pieces
3 Garlic cut in small pieces
30g Ginger cut in small pieces
1 Small carrot cut in small pieces
1 Chilly pepper cut in small pieces
1 Shallot cut in small pieces
1 Stick of lemongrass cut in small pieces
1/2 lime take off skin and cut in cubes
1/3 tea spoon Wasabi
20g olive oil
100 Coconut milk
Garlic 
Paprika Powder
Salt
Then add Prawns, courgettes and noodles and boil for other 5 minutes (check the cooking time on noodles pack usually is 2 minutes). Add mint and coriander. Adjust with salt and it’s ready.
