Risotto with Spinach and Courgettes

Suitable for Vegan Vegetarian and Gluten-free

Portion for 1 person

60 gr of rice
50 gr of spinach
90 gr of courgettes and/or courgettes flowers
1/2 onion
1/2 chilly
1 garlic clove
Olive oil (1tbs)
Salt (as you like)
Pepper (a pinch)

In a pot fry in olive oil onion, garlic and chilly previously chopped, add salt and pepper.
When they are soft and colour blond add the rice and 6 minutes after add the courgettes.
1 minute before the rice is ready add courgette flowers and spinach.

And Risotto is ready!
